Production
The production process begins with peeling black olives from the tails and leaves, as well as sorting rotten and crumpled fruits. After that, they are thoroughly washed using machines. Then the olives are placed in tanks that are filled with salted water and left for about a few weeks. After a few weeks, in order to reduce the bitterness in front of the olives, water is changed in the tanks and left for a few months. In the third process, the tanks are filled with prepared brine water and the olives are left to ferment naturally and allowed to stand for several months until they reach their eating maturity. Ripe olives are removed from the brine, sorted and washed. At last, they are put in packages and brine is poured over them.
